Apple has fixed 11 vulnerabilities in iOS 15.7 for iPhone and iPadOS 15.7 for iPad. This release was made because Apple has released iOS 16 and iPadOS 16 and not all devices will be able to upgrade to 16.
iOS 16
Apple has released their latest software release, iOS 16 which is available for both iPhone and iPad.
So if you have an iPhone 8 or above phone you can install iOS 16 now. This includes the iPhone SE 2020 and 2022 but not the original iPhone SE.
iPadOS 16 will install on iPad Mini 5 and above, iPad 5 and above, iPad Air 3 and above and all versions of iPad Pro.

The new intelligence features like removing the background from images, copying text from images and video, punctuation and smart dictation as well as running shortcuts from spotlight are not available in the iPhone 8 or X because they don’t have the A16 processor.
Door detection requires an iPhone 12 Pro or later as it requires LIDAR.
iOS 15.7
Apple’s new iOS 16 is not available to the iPhone 6S, 6S Plus, 7, 7 Plus and the original iPhone SE so Apple has released 15.7 to cater for those phones.
Likewise, for the iPad line-up the iPad Mini 4 and iPad Air 2 can run 15.7

Older devices
Apple released 12.5.6 on 31st August for iPhone 5s, iPhone 6, iPhone 6 Plus, iPad Air, iPad mini 2, iPad mini 3, and iPod touch (6th generation) however there is no 12.5.7 release for these devices announced.
This could be because iOS 12.5 lacks the features of iOS 15 that are vulnerable.
